KANADAN LETUT

1 egg
1 cup milk
2 TBSP oil
1/4 tsp salt
1 TBSP sugar
few drops of natural vanilla
1 cup flour
3 tsp baking powder

Beat the egg in a bowl. Add milk, oil, salt, sugar and vanilla. Add flour and baking powder through a sieve. Mix until there's no lumps. Fry on medium heat (no butter needed) until bubbles form and pancake browns. Flip and fry the other side as well. Makes enough for 2 people. Double or triple the recipe as needs be. For those with a wheat allergy - I use barley flour for Sienna's pancakes. Same recipe.

For toppings:
Canadians like to spread the pancakes with butter, then pour (maple) syrup on top. Another version is to mix frozen strawberries with Cool Whip.
I like to top mine with mashed banana, homemade whipping cream and then fresh strawberry slices mixed with some sugar. Yummy!!!
Some people mix blueberries in the batter and fry them with blueberries.

BBQ CHICKEN PITA PIZZA

pita breads
Bull's Eye "Bold Original" or "Honey Garlic Bohnanza" BBQ sauce (or any other good quality BBQ sauce)
cooked chicken
onion
red or green pepper
pineapple tidbits (tiny pineapple pieces from a can)
shredded cheese

Fry onion and red/green pepper (cut into wee pieces of course) until cooked. Put pita breads on a pizza baking sheet (a normal one will do if you don't have a special pizza one) which is covered with parchment paper (leivinpapru). Spread BBQ sauce on pitas. Top with cooked chicken, onion, red/green pepper, pineapple tidbits and shredded cheese of your choice (I like a blend of Cheddar and Mozzarella myself). Bake in 200C (400F) oven until cheese starts to bubble and brown. I usually turn it on "grill" mode after couple minutes so that the pitas don't overbake. I also usually buy a grilled chicken from the store so I don't have to worry about cooking chicken. So easy and fast, yet so yummy! I want to try red onions next time, I think they'd be great for this recipe. I've also seen this done with BBQ sauce and Alfredo sauce mixed together.
